Cantaloupe & Mango Chutney with Thyme

- 1 large mango cut into medium pieces
- ½ cantaloupe deseeded and cut into medium pieces
- 1 yellow onion chopped into small pieces
- ½ cup dried cranberries (preferably apple juice sweetened)
- ⅓ cup coconut sugar
- 1 teaspoon dried thyme
- ⅓ cup apple cider
- ⅓ cup water
- Sea salt to taste
- Place all ingredients except salt into a medium deep pan and bring to a boil over high heat
- Reduce heat and simmer for 40 minutes or until thickened stirring occasionally
- Turn heat off and add salt to taste
- Let cool completely and place in air tight container in refrigerator
- Serve cold or at room temperature
