Cantaloupe & Mango Chutney with Thyme

Serve as a side topping with a rice or quinoa dish or with slices of apples
Ingredients
  • 1 large mango cut into medium pieces
  • ½ cantaloupe deseeded and cut into medium pieces
  • 1 yellow onion chopped into small pieces
  • ½ cup dried cranberries (preferably apple juice sweetened)
  • ⅓ cup coconut sugar
  • 1 teaspoon dried thyme
  • ⅓ cup apple cider
  • ⅓ cup water
  • Sea salt to taste
Instructions
  1. Place all ingredients except salt into a medium deep pan and bring to a boil over high heat
  2. Reduce heat and simmer for 40 minutes or until thickened stirring occasionally
  3. Turn heat off and add salt to taste
  4. Let cool completely and place in air tight container in refrigerator
  5. Serve cold or at room temperature
