Summer, summertime and all great tasting light dishes are welcome. I need nourishment but hate to feel too full when I eat. This quinoa salad served chilled hits the spot in all areas including tummy satisfaction, good nutrition and feeling cool during the warmer months of the year.
I basically threw in any veggies that looked good into my cooked quinoa and then topped it off with pomegranate. Delish!

Quinoa Pomegranate Salad

I have written a basic recipe for a chilled quinoa salad with pomegranate but feel free to add whatever you may have in the house in terms of veggies that you want to throw into it.
Ingredients
- 4 cups cooked quinoa
- 1 cup cooked spinach
- 1 cup cooked edamame beans
- ½ cup diced shallots
- 1 avocado peeled and cut into cubes
- 6 tablespoons of olive oil plus more for drizzle when salad is ready
- freshly squeezed juice of 1 large lime
- sea salt
- freshly cracked pepper
- Seeds from one ripe pomegranate
Instructions
- In a large bowl combine quinoa, spinach, edamame, shallots and avocado
- Drizzle olive oil, add lime juice and combine well
- Add salt and pepper to taste
- Cover and chill for at least an hour
- Stir and serve with fresh pomegranate on top and a drizzle of olive oil
