I promise this is not a cheap way out of a blog post, I just honestly love roasted asparagus and it is a dish I make often. And simple, simple, simple.
The thinner the asparagus the less fibrous they are when you cook them. Chop about an inch off the bottoms to get rid of the hard stuff.
Add some fresh cracked pepper and sea salt and toss around to cover asparagus well.
Roast and here you have it. So good…

Serves: 4
Serve asparagus at room temperature or chilled. Pick asparagus that are medium to thin in thickness rather than large. The larger asparagus are more fibrous and not as easy to eat.
Ingredients
- Bunch of fresh asparagus stalks ( about a 1½ lbs. washed and dried)
- Olive oil
- Fresh cracked pepper
- Sea salt
Instructions
- Preheat oven to 350 F
- Cut about an inch from the bottom of the asparagus stalks
- Place asparagus in a baking dish
- Drizzle with olive oil
- Add fresh cracked pepper and salt
- Toss to cover all the asparagus well
- Roast for 10 minutes
- Carefully move asparagus around in the pan shifting the bottoms ones to the top
- Roast for 10 more minutes
- Remove asparagus from oven
- Let cool completely and serve at room temperature or chill and serve later

Hi Tabatha! I’m getting ready to go make this to go with dinner. I have some frozen organic asparagus so I hope that will work. I think I will also sprinkle some nutritional yeast over them after they come out of the oven…yum!!
