Have some leftover pesto?  Here is an idea for a quick small plate to snack on or impress a guest on the fly by whipping these out of the kitchen anytime.  These make a great easy canapé for a soiree as well.  I make pesto fairly often and keep some around for a quick pasta toss when I don’t have time to cook.

Last week I was searching the refrigerator for an afternoon snack but a cucumber is all I saw.  I frowned but then I smiled when I noticed the leftover pesto sitting immediately behind it.  Obvious marriage made in green!   The mandarin was sitting in the fruit bowl and starting at me as I put the cucumber and pesto on the counter top.  Serendipity!  It was calling out to add luscious orange color to the green on green.   If you don’t have a mandarin, use pieces of any ripe fruit you may have.  Oranges, apples, pears, melons all work well.

 

Cucumber & Pesto Canapés
Serves: 2
 
Ingredients
  • 8 peeled cucumber slices, medium thickness
  • 1½ to 2 tablespoons of Pesto
  • Small cut pieces of mandarin or other available fruit
  • Instructions
Instructions
  1. Arrange cucumber slices on a plate. Drop half a teaspoon or so of pesto on each slice and top with mandarin or other fruit.
