Got Cream? Yes, Mimic Cream
I make a lot of dishes that call for cream and I substitute with the usual suspects such as soy, almond and rice milk mixed with thickeners to get to a good cream consistency. They have all worked fine and I am happy to use them. But to be honest, my favorite non-dairy cream that I can just use directly from the carton is Mimic Creme, which is both dairy-free and soy-free. For everyday dishes I use the unsweetened version made of almonds and cashews and the consistency and texture are very close to a dairy cream. And as I have mentioned in some of my recipes, I have yet to find someone whose palate can tell the difference between this cream and a non-dairy cream when I have served it in dishes. It all depends how you use it of course but that’s why you have my recipes to try 🙂
You can find Mimic Creme at some Whole Foods markets but lately I have not seen them carry it so I have been buying mine online through Amazon or through Vegan Essentials. It’s good to stock up on a couple of cartons at least. You can buy the large 32 ounce cartons or the smaller size. If you can find the smaller size it is better because the large one has to be used within 14 days of opening.

I am not completely sure since Cape Town is far away from Boston but I do have friends who live there and I know there are stores where you can get non-dairy and gluten-free items.
