Quinoa Pomegranate Salad

I have written a basic recipe for a chilled quinoa salad with pomegranate but feel free to add whatever you may have in the house in terms of veggies that you want to throw into it.
Ingredients
  • 4 cups cooked quinoa
  • 1 cup cooked spinach
  • 1 cup cooked edamame beans
  • ½ cup diced shallots
  • 1 avocado peeled and cut into cubes
  • 6 tablespoons of olive oil plus more for drizzle when salad is ready
  • freshly squeezed juice of 1 large lime
  • sea salt
  • freshly cracked pepper
  • Seeds from one ripe pomegranate
Instructions
  1. In a large bowl combine quinoa, spinach, edamame, shallots and avocado
  2. Drizzle olive oil, add lime juice and combine well
  3. Add salt and pepper to taste
  4. Cover and chill for at least an hour
  5. Stir and serve with fresh pomegranate on top and a drizzle of olive oil
