You can replace the coconut yogurt with any type of non-dairy yogurt that you prefer. If the taste of cider vinegar is too strong for you add the optional agave. You can add the agave anyways if you want a sweeter mayonnaise.
Ingredients
  • 2 tablespoons Vegenaise or non-dairy mayonnaise
  • 2 teaspoons coconut yogurt or any non-dairy yogurt
  • 1 teaspoon apple cider vinegar (divided)
  • 1 teaspoon chopped dill
  • salt and pepper to taste
  • ⅛ teaspoon agave (optional)
  • 2 Bartlett pears not fully ripe (washed and dried)
Instructions
For the dill mayonnaise
  1. In a small bowl combine Vegenaise and yogurt.
  2. Add half of the cider vinegar and chopped dill and mix
  3. Add remaining cider vinegar, agave (optional)
  4. Add salt and pepper to taste
  5. Cover bowl and chill for at least 20 minutes before using
For the pears
  1. Cut pears into thin slices (about an ⅛ of an inch)
  2. Grease grill pan and heat over medium heat
  3. Add pear slices and cook 1 to 2 minutes until grill marks appear on down side
  4. Gently turn pears over with thongs or spatula
  5. Cook 1 to 2 minutes or until grill marks appear
  6. Turn heat off and gently place grilled pears on board or plate
  7. Let pears cool completely
  8. Spoon chilled dill mayonnaise on top of each pear and garnish with more dill (optional)
  9. Serve immediately
