Al ajillo is basically a potent garlic sauce used in some tapas dishes.  Artichokes or alcachofas al ajillo is a common savory dish that you may find in a traditional tapas menu.  You will probably always find gambas al ajillo (shrimp in garlic sauce).  Whether veggies or shrimp, it is always covered in a delectable garlic sauce. As I made this dish I remembered how back in Peru you can buy freshly chucked artichoke hearts at any local market.  Next best thing is to buy artichoke hearts canned, or even better vacuum packed if you can find them.  I buy mine from a company in California called Monterey Farms. My local Whole Foods carries these in the produce section.  I keep two or three bags at a time in my fridge and use the artichoke hearts in other dishes, including tossing them in salads.

artichoke hearts You can use plain artichoke hearts or grilled ones like the ones I used for this recipe.  The ajillo taste is strong and will seep into most anything you cook in it.

garlicThe key is to lose fear and mince up the entire garlic bulb and use it proudly in your sauce.

tomatoesOnce you eat all the artichokes in the ajillo take some bread and pick up whatever you have left of the sauce.  It is out of this world!

Artichokes Al Ajillo

Use canned or vaccum-sealed artichoke hearts. I have used grilled ones from a company called Monterey Farms out of California. These can be found in the produce section of some super markets.
Ingredients
  • ½ cup virgin olive oil
  • 2 tablespoons non-dairy spread like Earth Balance
  • 1 bulb garlic, peeled and minced
  • 10 cherry tomatoes cut in half
  • 2 tablespoon dry white wine
  • 1 can or 1 package of artichoke hearts (about 2 cups)
  • Freshly cracked pepper
  • Sea salt
Instructions
  1. Add olive oil and non-dairy spread into a skillet and turn heat to medium
  2. Add garlic and cook stirring often for 2 minutes. If garlic is turning brown too quickly turn heat to low
  3. Add tomatoes and cook stirring for 2 minutes
  4. Add wine and cook down for 2 minutes
  5. Add artichoke hearts and cook for 5 minutes.
  6. Add pepper and salt to taste
  7. Garnish with rosemary sprig (optional)
  8. Serve
